Ingredients
Mashed Sweet Potatoes
1 lb (500 g) sweet potatoes (about 1 large), peeled and cubed
3 tbsp (45 mL) butter
¼ tsp (1 mL) EACH salt and pepper
¼ cup (60 mL) grated Parmesan cheese
Meat Loaves
1 lb (500 g) Lean Ground Beef
⅓ cup (75 mL) grated parmesan cheese
1 green onion, finely chopped
1 tbsp (15 mL) prepared horseradish
¼ tsp (1 mL) EACH salt and pepper
Cooking spray
1 cup (250 mL) shredded Cheddar cheese
2 tbsp (30 mL) chopped fresh parsley
Instructions
- Mashed Sweet Potatoes: Place potatoes in a saucepan and add cold water to cover. Bring to a boil over high heat. Reduce heat and simmer for about 20 minutes or until tender. Drain well and return to saucepan; add butter, salt and pepper. Mash, using a potato masher, until smooth; stir in Parmesan cheese.
- Meat Loaves: Meanwhile, combine beef, Parmesan cheese, green onion, horseradish, salt and pepper using a fork in a large bowl (careful not to over-mix).
- Divide meat mixture into four equal portions and shape into ovals about 4 inches (10 cm) long and about 1 inch (2.5 cm) thick. Place in lightly sprayed air fryer basket, spacing them apart. Spread mashed potato mixture on tops of loaves, dividing equally.
- Set temperature to 375ºF (190ºC) and time for 15 minutes. Cook until a digital instant-read thermometer inserted into centre of each loaf reads 160ºF (71ºC).
- Combine Cheddar cheese with parsley in a small bowl. Generously sprinkle over top of meat loaves. Return to air fryer basket. Set time for 2 minutes. Cook until cheese is melted.
Per Serving (1 meatloaf or 1/4 recipe): 580 calories, 34g fat, 19g saturated fat, 120mg cholesterol, 870mg sodium, 31g carbs, 4g fibre, 10g sugars, 36g protein, vitamin A 165%, vitamin C 28%, vitamin D ≥1%, calcium 45%, iron 20%.

Notes
To bake in the oven instead of an air fryer: place mini meat loaves on a parchment paper-lined rimmed baking sheet and top with mashed sweet potatoes. Bake in preheated 375ºF oven for about 25 minutes or until a digital instant-read thermometer inserted into centre of each loaf reads 160ºF (71ºC). Sprinkle with cheese and parsley mixture and bake for 5 minutes or until cheese is melted.
Substitute yellow-fleshed potatoes for the sweet potatoes.
You can pick up some store-bought mashed potatoes to use on top of the meat loaves for a short cut. Or, if you have leftover mashed potatoes, it’s a great time to use them up!
Feel free to omit the potato topping and simply sprinkle mini meat loaves with Cheddar and parsley.
