Perfect Peppered Beef


Description

Bet you’ve never had ground beef like this before – you’ve got to try this flavourful sandwich meat that’s reminiscent of pastrami. Fareen Jadavji Jessa, foodmamma.com came up with this intriguing mix to keep the rotation of school lunch options interesting.


Ingredients

  • 2 tbsp whole black peppercorns
  • 1 tbsp whole coriander seeds
  • 1/2 tsp mustard seeds
  • 2 tbsp ground black pepper
  • 2 tbsp paprika
  • 1 tbsp brown sugar
  • 1 tbsp coriander powder
  • 2 tsp EACH onion powder, and garlic powder (or 4 tsp garlic powder)
  • 1 tsp salt
  • 2 lb Lean Ground Beef

Instructions

  1. In a plastic bag, combine the whole peppercorns, coriander and mustard seeds. Use a rolling pin to roll over the spices and crush the seeds. (Alternatively, use a mortar and pestle to crush the whole seed spices.) Add in the remaining spices and mix well to combine.
  2. Add the beef and seasonings to a stand mixer bowl; using the mixer dough hook, mix on medium for 5 minutes.
  3. Form the meat into a log and place on a foil-lined rimmed baking sheet. Bake in a 350˚F oven for 60 to 70 minutes, until the beef reaches 160˚F (71˚C). Let cool before slicing as thin or thick as you like it. Good in a sandwich, or serve as is with some crackers and cheese and pepper jelly.
