Korean Ground Beef Lettuce Cups

Ingredients

1 lb (500 g) Lean or Extra Lean Ground Beef

2 cloves garlic, minced

Half sweet red pepper, diced

1 tsp (5 mL) minced gingerroot

1/4 cup (60 mL) soy sauce

1 tsp (5 mL) Asian hot sauce, such as sriracha, chili crisp or other chili sauce, approx (see Note)

1 tsp (5 mL) sesame oil

Butter lettuce leaves such as Boston or Bibb

Fresh lime wedges

Shredded carrot and cucumber

Chopped cilantro or mint or chopped green onion

Hoisin sauce


Instructions

  1. Cook beef, garlic, diced pepper, and gingerroot in a large skillet over medium-high heat, stirring often and using back of spoon to break up beef into chunks, for 8 to 10 minutes until meat is thoroughly cooked. Drain, if necessary.
  2. Stir in soy sauce, chili sauce and sesame oil; reduce heat to medium-low and simmer 3 to 4 minutes until flavours are blended. Transfer to warm bowl.
  3. To serve, spoon beef filling into lettuce leaves. Top with a squeeze of lime juice and carrot, cucumber, chopped cilantro, as desired. Roll up with your hands to eat.

Notes

You can use any type of Asian hot sauce you prefer; if using a very hot sauce, such as sriracha, add 1 tsp (5 mL) to start and add more to taste as desired. If you prefer a mild sauce, that works too!
