Taco Ground Beef Salad

Beef

1 tbsp (15 mL) oil

1 onion, chopped

2 cloves garlic, minced

1 tbsp (15 mL) chili powder or taco seasoning

½ tsp (2 mL) EACH salt and pepper

1 lb (500 g) Extra Lean or Lean Ground Beef

Salad

½ cup (125 mL) olive oil

1 tsp (5 mL) grated lime zest

¼ cup (60 mL) fresh lime juice

2 tbsp (30 mL) salsa

4 cups (1 L) shredded lettuce

2 cups (500 mL) crumbled corn chips or tortilla chips

1 can (540 mL) red kidney beans, drained and rinsed

1 tomato, chopped

1 cup (250 mL) shredded Cheddar cheese

1 avocado, diced

¼ cup (60 mL) sour cream

2 green onions, thinly sliced


Instructions

  1. Beef: Heat oil over medium-high heat in a large nonstick skillet. Cook onion, garlic, Cajun spice, salt and pepper, stirring, for about 4 minutes or until onion is softened. Add beef and cook, stirring often and using back of spoon to break up meat into small chunks, for 8 to 10 minutes or until browned and completely cooked. Drain, if necessary. Set aside.

 

  1. Salad: Whisk together oil, lime zest, lime juice and salsa in a small bowl. Set aside.
  2. Divide lettuce equally among 8 dinner plates. Scatter chips, beans and tomato over top, dividing equally; drizzle with dressing. Spoon Beef on each salad. Top with cheese, avocado, sour cream and green onions.

Notes

Kick up the heat in the beef filling by using a spicy taco seasoning or adding ½ tsp (2 mL) chipotle powder or replacing the chili powder with 2 tsp (10 mL) Cajun seasoning.
