Ingredients
- 2 tbsp whole black peppercorns
- 1 tbsp whole coriander seeds
- 1/2 tsp mustard seeds
- 2 tbsp ground black pepper
- 2 tbsp paprika
- 1 tbsp brown sugar
- 1 tbsp coriander powder
- 2 tsp EACH onion powder, and garlic powder (or 4 tsp garlic powder)
- 1 tsp salt
- 2 lb Lean Ground Beef
Instructions
- In a plastic bag, combine the whole peppercorns, coriander and mustard seeds. Use a rolling pin to roll over the spices and crush the seeds. (Alternatively, use a mortar and pestle to crush the whole seed spices.) Add in the remaining spices and mix well to combine.
- Add the beef and seasonings to a stand mixer bowl; using the mixer dough hook, mix on medium for 5 minutes.
- Form the meat into a log and place on a foil-lined rimmed baking sheet. Bake in a 350˚F oven for 60 to 70 minutes, until the beef reaches 160˚F (71˚C). Let cool before slicing as thin or thick as you like it. Good in a sandwich, or serve as is with some crackers and cheese and pepper jelly.
