We adapted the recipe to make square patties for simplicity. Lots of veggies and less bread make this recipe a contemporary twist on the traditional burger meal.
Ingredients
- 1 small onion and sweet red pepper cut into thin strips
- 2 tablespoons olive oil
- ¼ cup diced pickled jalapeno peppers
- 1 lb (500 g) Extra Lean Ground Beef
- 1 tsp EACH salt and Montreal steak spice
- ¼ teaspoon ground black pepper
- 8 slices cheese (jalapeno Jack, American, mozzarella, etc)
- 8 small corn or flour tortillas
- Cheeseburger/quesadilla condiments: burger sauce, pickles, guacamole, fresh salsa, etc.
Instructions
- Preheat oven to 425ºF. Line two rimmed baking sheets with foil. Toss the onion and pepper strips with the oil; spread onto one of the baking sheets. Cook for 15 minutes, stirring halfway. Let cool. Transfer to cutting board; coarsely chop onions and peppers and toss with the jalapeno peppers; transfer to bowl and remove foil from pan. Place empty pan back in the oven to keep hot.
- Meanwhile, pat ground beef into the second lined baking tray to a thickness of about ¼-inch (7 cm), measuring approx.10 x 11 inches in the pan. (NOTE: It won’t fill the baking sheet.) Sprinkle surface with salt, steak spice and pepper. Press seasonings into the surface.
- Cook beef in the oven for 6 minutes; remove from oven and drain off any liquid. Preheat the broiler and reposition top oven rack to broiler position. Return beef to the oven and broil approx. 3 minutes until ground beef is browning, sizzling and cooked through (to 160˚F/71˚C).
- Top burger mixture surface with 4 of the cheese slices and place them back under the broiler briefly to melt cheese. Remove from the oven and cut into 4 equal square burgers.
- Place 4 tortillas on the hot baking sheet that was used to cook the vegetables. Top each tortilla with 1 slice of cheese, some of the cooked onions, peppers, and a burger patty, cheese-side up. Place a second tortilla on stop of each burger and after lowering the broiler rack in the oven, place burgers back in the oven under the broiler for 2 to 3 minutes, or until the top tortillas begin to toast. Remove the quesadillas from the oven; let stand for a minute or two before cutting into wedges.
- Serve with your favourite burger and quesadilla condiments.
