Soupy Beef Ramen Noodles

Ingredients
1 container (900 mL) prepared pho seasoned or beef broth
2 tbsp (30 mL) soy sauce or tamari
2 pkgs (85 g EACH) instant ramen noodles (flavour packet discarded)
1 portion Big Batch Calcium-Boosted Beef, thawed if necessary
4 baby bok choy, coarsely chopped (about 1 lb/500 g TOTAL)
Half sweet red pepper, thinly sliced
1 cup (250 mL) frozen shelled edamame or peas
Sliced green onions and sriracha (optional)
Instructions
- Combine broth and soy sauce in a large saucepan and bring to a simmer over medium-high heat. Add noodles and simmer for 2 minutes or until tender, gently stirring to loosen noodles. Lift noodles from broth using tongs and divide among 4 serving bowls. Set aside.
- Add Big Batch Calcium-Boosted Beef mixture, bok choy, red pepper and edamame to broth and cook, stirring for about 5 minutes or until beef is hot and vegetables are tender-crisp. Ladle over noodles to serve. Garnish with green onions and sriracha, if desired.
