Since it’s Iron Awareness Week, you should know iron helps carry oxygen to your brain and muscles, and a lack of iron can leave you feeling tired and drained. Trust me, I know because I’ve walked the path of anemia.
In Canada, iron is a nutrient of concern, especially for babies and women. That’s why Health Canada recommends iron-rich foods, including beef, as one of the first foods for babies. Women also need twice as much iron as men, making this recipe a great choice for boosting those iron levels!
So enter my recipe for The Best Beef and Black Bean Taco Meat. I’m not kidding…we love this recipe and there’s so many ways to enjoy it but here it is on a board, because everything is always more *fun* on board.
Here’s a few things I did to keep iron top of mind:
~ used beef
~ added in black beans, which contain non-heme iron.
~included tomato paste and salsa: beef, plus the vitamin C in the tomato paste and salsa, help to increase the absorption of the non-heme iron in the black beans
~ cooked the meal in a cast iron pan
