Beef & Cheese Pinwheels

Ingredients

4 large flour tortillas

1 pkg (227 g) spreadable herb-and-garlic cream cheese

1/4 cup (60 mL) red pepper jelly (hot or sweet)

1 bunch watercress, arugula (or handful baby greens)

10 oz (300 g) shaved Roast Beef (about 2 cups/500 mL)

1/2 cup (125 mL) cashew pieces

Instructions

  1. Arrange tortillas in a single layer on a work surface. Spread one-quarter of the cream cheese over each tortilla, spreading to the edges. Spread one-quarter of the red pepper jelly over the cream cheese.
  2. Top each with watercress, beef and cashews, dividing equally. Season with pepper to taste. Roll up each tightly. Wrap each roll in food storage wrap and refrigerate for at least 1 hour or for up to 8 hours.
  3. To serve, unwrap rolls. Slice on the diagonal into 3/4-inch (2 cm) thick slices.

Notes

For more mild-flavoured wraps, use plain cream cheese or shredded Cheddar cheese, shredded iceberg lettuce in place of the watercress and minced sweet pickles or relish in place of the pepper jelly. Omit cashews, if desired.
