Do-Ahead Cold Roast Beef for Slicing

Do-Ahead Cold Roast Beef for Slicing


Ingredients

Scale

2 lb (1 kg) Beef Inside Round Oven Roast

2 tsp (10 mL) kosher salt

1 tsp (5 mL) fresh ground pepper

1 tsp (5 mL) garlic powder

1 tsp (5 mL) dried Mediterranean herbs (rosemary, oregano or thyme leaves or a mixture)

1 tbsp (15 mL) olive oil

3 cloves garlic, sliced (optional)


Instructions

  1. Pat roast dry with paper towel. Place on a plate. Combine salt, pepper, garlic powder and herbs in a small bowl. Sprinkle all over the roast, rubbing into the beef and ensuring it is evenly coated all over. If desired to infuse seasonings, refrigerate, uncovered, for 1 hour.
  2. Heat a heavy, ovenproof skillet over medium heat. Add oil and garlic (if using) and let sizzle for 1 to 2 minutes. Using a sturdy pair of tongs, carefully add the roast to the pan. Sear, turning to brown on all sides, for about 10 minutes, until a crust forms. Place roast on wire rack in the skillet.
  3. Insert oven-safe meat thermometer into centre of roast. Transfer roast in skillet to preheated 275°F oven and roast, uncovered, for about 1-1/4 hours for medium-rare, removing from oven when 5°F (3°C) below desired finished temperature (145°F/63°C for medium-rare, or 160°F/71°C for medium, or 170°F/77°C for well-done).
  4. Remove the roast from the oven; transfer roast on rack to a rimmed baking sheet or large plate. Let cool to room temperature.
  5. When the roast is cool, wrap and place in a shallow dish. Refrigerate for at least 2 hours, until chilled, and ideally overnight. (The roast beef can be refrigerated for up to 3 days.)
  6. To slice, unwrap and place on a sturdy cutting board. Carve across the grain into very thin slices.
