Mini Beef Slider Skewers

Mini Beef Slider Skewers

Ingredients

1 large egg

¼ cup (60 mL) ground almonds

1 tbsp (15 mL) prepared yellow mustard

½ tsp (2 mL) EACH garlic powder and onion powder

¼ tsp (1 mL) EACH salt and pepper

8 oz (250 g) Lean Ground Beef

1 tbsp (15 mL) oil

Toothpicks or small skewers

20 EACH grape tomatoes and cucumber slices (approx)

Tzatziki (optional)


Instructions

  1. Combine egg, almonds, mustard, garlic powder, onion powder, salt and pepper in a bowl. Gently mix in beef with a fork (careful not to over-mix). Scoop level tablespoonfuls (15 mL) of the beef mixture and shape into about twenty 1/4-inch (5 mm) thick patties, about 2 inches (5 cm) in diameter.
  2. Heat oil over medium heat in a large nonstick skillet. Pan-fry patties, in batches as necessary, for about 4 minutes, turning twice or more, until a digital instant-read thermometer inserted sideways into each patty reads 160°F (71°C). Transfer to a clean plate.
  3. Skewer one tomato, beef patty and cucumber slice on each toothpick. Serve with tzatziki for dipping, if desired.

Notes

Thread small cubes of cheese onto skewers along with the patties for a cheeseburger variation.
