This beef and mushroom filling with Thai-inspired flavours is perfect to make ahead and serve hot or cold. Tuck it into lettuce cups or sweet pepper halves to snack on.

Thai Beef & Mushrooms

Ingredients
1 lb (500 g) Lean Ground Beef
1½ cups (375 mL) finely chopped cremini or button mushrooms
½ cup (125 mL) finely chopped onion
¼ cup (60 mL) hoisin sauce
1 tbsp (15 mL) reduced-sodium soy sauce
1 tbsp (15 mL) rice vinegar
5 cloves garlic, minced
2 tsp (10 mL) minced gingerroot
3 green onions, sliced
2 tsp (10 mL) sesame oil
¼ cup (60 mL) peanuts, chopped (optional)
Instructions
- Cook beef, mushrooms, and onion over medium-high heat in a large nonstick skillet, stirring often and using back of spoon to break up beef into chunks, for 8 to 10 minutes until meat is thoroughly cooked and most of the liquid is evaporated. Drain, if needed.
- Meanwhile, combine hoisin sauce, soy sauce, vinegar, garlic and gingerroot in a small bowl.
- Pour sauce into skillet and cook, stirring to combine, until heated through. Remove from heat and stir in green onions and sesame oil.
4. Serve hot or let beef mixture cool and store in an airtight container in the refrigerator for up to 3 days. Serve cold or reheat in the microwave or on the stovetop until bubbling hot. Garnish with peanuts (if using).

The hot beef mixture also makes a tasty dinner served over rice or noodles.
